I also roasted the cauliflower - 4lbs with chopped red onion and the brown bits were really good. For that much cauliflower, 1. I toasted about 2 cups of coarse sourdough crumbs and tossed them with the cheese for the topping and browned it under the broiler at the end.

Quick And Easy Vegan Mac & Cheese

One time we had to sub hot Chinese mustard for dijon and it was great. Good basic start but like many other cooks, made my own mods. Roasted the cauliflower to start and turned on the broiler to at the end to brown it a bit. Browned some butter and garlic in the saucepan before adding cheese and milk.

Used goat cheese and buffalo mozzarella with about half the milk. Added a splash of bajan hot mustard sauce. Topped with grated old cheddar. Didn't cover it but let it get brown and gooey. It was delish! This recipe yielded a very tasty soup. I was careful to drain away any moisture from the cauliflower, still soup. I will enhance it with more veg. We loved this one. We followed the recipe exactly, except that we forgot to put on the foil during baking. It must not have mattered, because we loved the result. My teenage daughter doesn't like cauliflower, and she enjoyed it.

She even asked for the leftovers at lunch the next day. Would absolutely make again, just as written, except steamed on stovetop since no microwave. We enjoyed this very much, and while a little wet the first night, when reheated the second night at for about 20 minutes, was even better.

We loved this! I made a major adjustment in how I prepared the cauliflower. I thought microwaving it would make the cauliflower mushy so I roasted it instead. I broke the cauliflower into florets and tossed them with olive oil, salt, and pepper. I roasted them in a degree oven until they were golden brown and then cooled them in the fridge overnight.


They were tender but still held their shape. After I took them out of the fridge, I chopped them up very coarsely I didn't want to have really small pieces. I wanted the cauliflower to be recognizable. I then followed the recipe to a tee but made sure I salted it a little more and added white pepper. It was terrific. And it was also very good the next day reheated in the oven. Really delicious and cheesy. I used goat cheese instead of cream cheese-more protein, fewer odd ingredients like stabilizers and preservatives. I also experimented and used cooked spaghetti squash as a layer underneath the cauliflower.

Also yummy. I think I could have lowered the fat percentage just by using more cauliflower for the same amount of sauce. Another favorite trick that I will try: using buttermilk usually comes as low fat instead of whole milk. It has a nice tart flavor and, like whole milk, provides a nice texture to a sauce, but does not disintegrate when heated the way yogurt will. This was easy to make and delicious.
